Dinner 11/29

I am hispanic. This means cooking in quantity, and with lots of oil... and other non-healthy stuff. My family tends to only do fish during lent. That is pretty much the only time I don't eat fish... Jesus still loves me.
Anyway.
My BF lives in Dallas. Before that he lived practically with me. We would cook together Salmon was our fancy pants dinner go to. 1 lb would do it for the both of us.... but now....

I have discovered its hard cooking for one.

I get home at around 4:30p or 5:30 depending on when we have cheerleading practice.
There are days when I'm exhausted...
So.
A quick and easy dinner is what I am in search for.
Got it!

Saucy Salmon with Peas and Shrooms
1/4 lb. Salmon ( for one )
1/4 cup Soy Sauce
1/4 cup Water
1/4 cup Brown Sugar
Cap full of olive oil
Salt & Pepper to tase
1 Packet of Steamables Frozen Peas and Mushrooms
1 Packet of Uncle Ben's Microwaveable Rice ( I almost typed in Don's and Ben's... that is definitely a liquor store...try not to get that confused Jenn)

Rub your tiny little piece of Salmon with salt and pepper. Don't get discouraged by how small it is... just think of yummy it will be... :)
In a bowl, mix the soy sauce, brown sugar, water and oil.
Put the salmon in a ziplock, then pour the mixture in. Its best if you let it marinate for at least 2 hours, but today I got home at 4:30p and took it out at 5:30p and it was still good!
Heat the oven till 375
Line a pan with foil, Pam it, and then make a foil boat- you know that bowl you make with foil so that none of the juices of your creation run out.
Put the salmon in the boat, and unlike a real boat, you want the liquid in this one. Pour the marinade in the boat and close it... so that it almost steams the fish with your marinade.
Put in the oven at 375 for 15 min.
At 10 min, put the peas in the microwave- 5 min
Put the rice packet in the microwave- 1:30min
Take everything out when its done.
EAT IT.
